My
name is Eduardo Kola, better known to all as “Eddie Spaghetti.” I came from a big family of five brothers and five sisters.
I was born and raised in Naples, Italy.
I was part of our family restaurant where we cooked Italian
Cuisine. I started at
the age of ten, learning our family recipes and valuing the art of food.
I worked extremely hard for long hours to continue our family
traditions. Although the
family restaurant was important, my parents also made sure that education
was my number one priority. Along
with work, I was slowly but surely able to graduate from high school, and
later attended a culinary college. After graduating from college, I was drafted into the
Navy where I continued my passion for cooking.
I later traveled to America at the age of twenty-two. I was able to apply my skills with Americans by cooking
the exquisite Italian cuisine that I learned from my family.
My experience at my brother-in-law's restaurant, contributed to the
opening of my first restaurant in 1995:
Eddie Napoli's Italian Restaurant.
I continued to open more Eddie's Napoli's all over the Dallas
Metroplex, and one in downtown Amarillo.
Now I have opened my sixth restaurant, which is here, in Amarillo
as well.
